Key Ingredients for This Recipe
These are the ingredients that I used to prepare the Andhra style chicken fry in my simple cooking recipe in Malayalam.
Chicken with bones- ½ kg
Onions, chopped – 2
Ginger-garlic paste – 3 tablespoons
Sliced green chilis – 4 (adjust this according to your spice levels)
Cashew Nuts
Red chili
Curry leaves
Coriander leaves
Salt
Turmeric – ¼ teaspoon
Sunflower oil – 4 tablespoons
chili powder – 1 teaspoon
Kashmiri chili powder – 2 teaspoons
coriander powder – 1 teaspoon
Jeera powder – 1 teaspoon
Red chilis – 3
To marinate the chicken:
Salt – as needed
Turmeric – ¼ teaspoon
Vinegar – 2 teaspoons
As you prepare this dish, you will be able to take the taste of the chicken to new heights. While marinating the chicken remember to just add required salt as you will be adding more salt in the preparation ahead. Its best to keep the chicken for marination for about 10 mins. Also remember to cut the chicken pieces neither too small nor too big.
Step-by-Step Guide to Prepare Andhra Style Chicken Fry
In my cooking videos Malayalam channel Kalavara, you can have a look and see how easily this dish can be prepared. Here im giving you a brief step by step guide to make this amazing dish and wow your loved ones.
To prepare this dish I have taken ½ kg chicken with bones. Let’s marinate it first with bit of salt, turmeric and vinegar for 10 mins.
Next let’s prepare the masala for the chicken. Light the stove and add 4 tablespoon of sunflower oil in the pan.
Add Ginger garlic paste and mix well.
To this add the onions, add bit of salt. Also add green chillies, curry leaves, and mix well.
Once the onions have turned brown, add ¼ teaspoon turmeric and the marinated chicken pieces and mix well.
Let this be kept in small flame and cook for around 10 mins.
Now add the masala powders- 1 teaspoon chilly powder, 2 teaspoon Kashmiri chilly powder, one teaspoon of coriander powder, and one teaspoon of cumin powder.
Mix this all together, and add 3 dry red chillies to this. Remember to check its taste in between.
Close the lid and let it cook for another 5 more mins.
Add the cashews once all the water has evaporated and mix well.
Decorate with coriander leaves and serve the dish hot. Enjoy the lip-smacking Andhra style chicken fry.
